The perfect picnic salad with Honeytomatoes® and JOYN® tomatoes, easy to prepare, easy to make ahead of time and take away!

Halve the Honeytomatoes® and cut the JOYN® tomatoes into wedges. Peel the red onion and cut into thin half moons. Cut the kalamata olives into slices and the artichoke hearts into wedges. Peel the garlic cloves. Rinse the cannellini beans with water, drain well and, if necessary, pat dry with a paper towel.
With a food processor or hand blender, mix the basil with the olive oil, 1 tablespoon of water and the garlic until smooth. Season with salt and pepper.
Mix all the salad ingredients together, then stir in the basil oil and take it to your picnic!
Delicious with some rocket. This recipe uses artichoke hearts from a tin or jar, but did you know that they are also delicious if prepared from fresh? Artichokes are available in season at the market or in larger supermarkets. You can prepare artichokes by boiling them in a large pot of water for 20-25 minutes with a little lemon juice. Make sure they stay submerged under the water during cooking.
