  • PREPARATION

    1. Rinse the herbs and pat them dry. Finely chop the leaves.

    2. Cut the Looye JOYN tomatoes into 1 cm (½ in.) cubes.

    3. Remove the seeds from the peppers and chop into 1 cm (½ in.) cubes.

    4. Peel and finely chop the onions and garlic.

  • HOW TO PREPARE

    1. Heat the olive oil in a large frying pan and fry the onion with the garlic and the red and green peppers for 5 minutes. Add cumin seeds and paprika powder and fry for a few minutes.

    2. Add the Looye JOYN tomato cubes and thyme and stir well. Simmer the sauce, covered, for 10 minutes.

    3. Stir in half of the coriander and parsley.

    4. Make four small wells in the sauce. Carefully break the eggs into the wells and cook, covered, for 5 minutes.

    5. Sprinkle with the remaining herbs. Finish with cayenne pepper and finely ground sea salt to taste.
