Rinse the apple and vegetables and cut them into cubes of about 2 cm (½ in.).
Put all ingredients in a blender or food processor and puree until smooth.
For a very smooth result, pour the pureed mixture into a sieve and push the smoothie through with a soup ladle.
Leave to cool in the fridge for one hour or serve the smoothie immediately with some ice in a long drink glass. Garnish with a fresh mint leaf.
