Pre-heat the oven to 200°C.
Peel the potatoes and dice into very small cubes. Remove the core from the apple and cut into cubes of the same size. Also cut the JOYN® tomatoes into small cubes.
Finely chop the sage.
Crumble the goat cheese.
Blanch the potato cubes in boiling water for 2 - 3 minutes. Drain the water and rinse with cold water.
Mix the potato cubes with the apple cubes and JOYN® tomato cubes, sage, goat cheese and a pinch of salt and pepper in a bowl.
Cover two muffin tin cups with the pancetta slices. You will need three slices for each cup.
Divide the filling evenly over the 2 cups.
Bake in the oven for 15 minutes until the pancetta is brown and crispy on the edges, and the inside is cooked and golden brown.
