Pancetta bites with goat cheese, apple and sage

  • PREPARATION

    1. Pre-heat the oven to 200°C.

    2. Peel the potatoes and dice into very small cubes. Remove the core from the apple and cut into cubes of the same size. Also cut the Looye JOYN tomatoes into small cubes.

    3. Finely chop the sage.

    4. Crumble the goat cheese.

  • METHOD

    1. Blanch the potato cubes in boiling water for 2 - 3 minutes. Drain the water and rinse with cold water.

    2. Mix the potato cubes with the apple cubes and Looye JOYN tomato cubes, sage, goat cheese and a pinch of salt and pepper in a bowl.

    3. Cover two muffin tin cups with the pancetta slices. You will need three slices for each cup.

    4. Divide the filling evenly over the 2 cups.

    5. Bake in the oven for 15 minutes until the pancetta is brown and crispy on the edges, and the inside is cooked and golden brown.
