Looye Honeytomatoes quiche with goat cheese

A quick tomato quiche with a ton of flavour! Your guests will love this recipe. Tip: also delicious in combination with Looye JOYN tomato soup.

  • PREPARATION

    1. Finely chop the rosemary leaves.

    2. Crumble the goat cheese.

    3. Cut the Looye Honeytomatoes in half.

  • METHOD

    1. Pre-heat the oven to 200°C.

    2. Grease a quiche tin or cover the tin with a baking sheet and line with puff pastry. Cut away any excess puff pastry with a sharp knife and use this to strengthen the edge of the quiche.

    3. Prick several small holes in the dough with a fork and cover the pastry completely with a thin layer of couscous. The grains will absorb any excess moisture, ensuring a nice crispy base. You will not taste the couscous after baking. Carefully put the tin in the fridge.

    4. Beat the eggs in a bowl with the crème fraîche, a pinch of pepper and salt and the rosemary.

    5. Remove the tin from the fridge and pour in the egg mixture. Top with the goat cheese and arrange the halves of Looye Honeytomatoes in the mixture, with the flat side facing up.

    6. Put the quiche in the oven and bake for about 30 minutes until the edges are golden brown and the filling has set.

    7. Leave the quiche to cool slightly before removing it from the tin and cutting it into eight pieces.

  • TIP

    1. While the quiche is baking, serve a bowl of delicious Looye JOYN tomato soup as an appetiser. Instead of the soup, you could also serve the quiche with a delicious salad with Looye JOYN tomatoes.
