Panzanella - Italian bread salad

An easy Italian meal using stale bread! Sounds delicious, doesn't it? The Panzanella salad is made with JOYN® tomatoes, sweet peppers & olives. However, many versions are possible - in short, you can vary!

  • PREPARATION

    1. Any Italian leftovers, for example: red onion anchovy fillets capers grilled peppers olives First of all: make sure your bread is stale. If you don't have stale bread, tear a fresh focaccia or ciabatta into pieces and bake at 175 °C in the oven (without oil!) for about fifteen minutes.

    2. Roughly chop the JOYN® tomatoes, Chop the other ingredients you want to use, such as grilled peppers, onion, etc.

    3. Tear the stale bread in pieces.

  • METHOD

    1. Whisk the olive oil, vinegar and a pinch of salt and pepper together.

    2. Mix the JOYN® tomatoes, bread, vegetables and dressing together. Leave for an hour to allow all the flavours to infuse the bread properly.

    3. Finally, just before serving, finish it off with fresh basil.
