'The Ghost of Mary' is also called a 'Clear Bloody Mary'. It gets its name from the tomato consommé that is used instead of tomato juice. This makes this fresh cocktail perfect on a hot day!

  • PREPARATION

    1. Cut the Looye JOYN tomatoes into quarters.

    2. Peel the onion and roughly chop. Do the same with the peppers and the celery stems. Cut the red chili peppers in half and remove the seeds. Roughly chop the garlic.

    3. Bring 1.5 litres of water to the boil and add all ingredients, including the herbs. Simmer for 30 minutes.

    4. Sieve the ingredients from the consommé. Next, filter the remaining liquid three times (using a cheese cloth in a sieve) until about 1.2 litres of clear consommé remain.

  • METHOD (for one cocktail)

    1. Add 120 ml of the 'Ghost of Mary' liquid to a cocktail shaker with ice.

    2. Add 40 ml of vodka.

    3. Shake well and pour the cocktail over ice in a long-drink glass. Add a few shakes of Tabasco to taste and garnish with thyme sprigs, a slice of lemon and a Looye Honeytomatoes.
